For WWF’s Earth Hour 2012 some of the UK’s best chefs are helping us to show that if we adapt what we eat slightly, we can make a positive difference for ourselves and for nature.

    Why aren’t the recipes vegetarian? Promoting fish recipes should not be part of preserving our planet!

      I absolutely agree that it’s easy to have a delicious meal without meat or fish. However what we have found is that many people don’t agree and are put off by the “meat free” tag. What we’ve been trying to demonstrate is ways to have “less” and these meals are certainly a lot less than your average punter eats – none of the starters contain meat for example. It’s also important not just to swap meat for dairy (a high dairy consuming veggie may have as a high impact diet as some meat eaters).

      On reflection I think that we have ended up with too many fish recipes overall – this is partly a result of the recipes all the lovely chefs have “loaned” us individually – and individually they’re all fine as part of our “healthy people, healthy planet” principles but the weighting is perhaps a bit too fishy overall – have a look at our overall menu http://earthhour.wwf.org.uk/get-involved/plan-a-night-to-remember/celebrate-with-a-special-candlelit-dinner/earth-hour-a-la-carte

    We’re slowly adding more recipes from supporting chefs – and yes at the moment there are a lot of fish recipes up there simply because those are the recipes that have been “loaned” to us so far. Be assured more veggies ones will be coming soon. We believe that it’s fine to eat fish that is credibly certified so that you can be sure it’s been fished in a sustainable manner – for example MSC (note the MSC logo alongside these recipes).

    For us sustainable food is about our five Livewell principles (link) – yes we certainly need to eat lot less meat here in the UK but it’s not quite as simple as going vegetarian. Take a look here for some more on the discussion

    I agree with Frances, but also could the England based chefs supply you with recipes for food that can be bought in local and rural farmers markets, in season and not fresh herbs and foods only shipped to London, or to supermarkets from all over the world.

      All the chefs featured were asked to supply menus that meet our Livewell principles http://www.wwf.org.uk/earthhourfood :
      1. Eat more plants
      2. Waste less food
      3. Eat less meat
      4. Eat less processed food
      5. By credible certified produce

      These principles are designed to address the major environmental impacts in the food chain and for the majority of the UK population would represent a big step forward. From your comments I am guessing you have more than average food knowledge. But there are a couple of things to be aware of. The issue of “food miles” is complex – at WWF we do not see them as a key driver of greenhouse gas emissions from the global food supply – although there are many good reasons to buy local.       If you look at the full range of dishes http://earthhour.wwf.org.uk/get-involved/plan-a-night-to-remember/earth-hour-celebrity-chef-menus/earth-hour-a-la-carte I would hope any supporter can find something that fits the bill for ingredients they can source easily – whether they live in the country, the city or even outside of the UK. And many recipes are very easy to adapt – you could use all sorts of veg for Ching’s stir-fry for example whilst Rachel’s pasta would be easy to make with locally grown pumpkins.

      Of course whether the recipes are seasonal or not will depend on the time of year that you’re cooking them – we hope these will be available for supporters for a while!

    I agree with Frances and Lindiss, in all the recipes I saw had fish or meat as the centrepiece and not some sideline.It really is not that difficult to have beautiful flavours without meat and it’s much better for the environment, I would’ve expected something a little more progressive from the WWF. Even if you do eat sustainable fish or locally farmed ethically produced meats, it still takes a massive toll on the environment, we should all be doing our bit to eat very much less meat and fish, if you must at all.
